In summer, the animals are raised on pasture at altitudes of over 1,000 metres. In winter, they are stabled and fed hay from natural meadows. There are around a hundred breeders in the Massif du Mézenc, straddling the Haute-Loire and Ardèche. On the Haut-Lignon, the village of Mazet-Saint-Voy is part of the PDO.
